Patrons of chic and trendy “Mr Chow’s” in London, Los Angeles and New York may well be intrigued to hear that there is a restaurant in Ealing known affectionately by its customers as “Mrs Chow’s”. A Chinese lady called Mrs Chow is in charge of the cooking at Maxim’s and her culinary philosophy can be described as a constant search for freshness and natural ingredients. She believes in developing and blending natural tastes without the use of additives. |

The Chinese believe that a woman's place is in the kitchen, and that means at home according to Confucius. In modern China the cooking profession is entirely dominated by males - Mrs Chow is therefore a rare exception and at Maxim the food reflects her personal tastes and standards as well as the cuisine of her native province, Shantung. Mrs Chow, who started life as a schoolteacher, comes from a family of restaurateurs as did her late husband, himself a professional chef. They started Maxim in 1974 and made it a great success, much acclaimed in the press and at some length in different food guides. | | Maxim was redecorated and considerably extended to twice its original size in 1979 and refurbished again in 1987. The new and spacious kitchen is a great source of pride to Mrs Chow who supervises the cuisine and has many specialities to her credit, including dishes invented by herself. She also makes home-made Chinese noodles and various other forms of pasta so characteristic of the Peking style of cooking. |
